Camping Recipes

These great recipes were given to us from our Facebook friends in august this year enjoy !
 

Pan fried veggies:

There are endless combinations on this, but this is my favourite.

Oil
Butter
Potatoes, cubed.
Mix of other vegetables like carrots, zucchini, etc., cubed
1 tomato, roughly chopped
pesto

Melt butter with oil in a large frying pan over high heat. Add the potatoes and other root veggies if using and stir over high heat until they're browned on all sides.

Turn the heat down and add softer veggies, like zucchini or capsicum. Stir for a minute. Add tomato and a spoonful of pesto or other flavouring. Season with pepper and salt.

Cook over low heat until all veggies are cooked, stirring occasionally. If you want a runny sauce, cover with lid or foil. It works without lid too, just needs a bit more stirring then.

Serve with meat of your choice (sausages and chicken kebabs are our staple meats when camping!) and a dollop of good mayo (won't name brands but there's only one!) on the side.

Very satisfying camp food.
Lemonade Scones

1 Cup Lemonade
1 Cup Cream
3 Cups S/R Flour
1 Egg

Mix together and cut out scones and place in camp oven till golden brown, also can put hand full of sulatna's in YUMMY !!!

Pumpkin Stew

One whole pumpkin- larger the better.
Slice top off. Keep
Scoop pips out
Fill with preferred meat, veggies, herbs,etc
Fit lid [top of pumpkin]
Secure with skewers
Place whole pumpkin in coals for 1-2 hours
When serving scoop some of pumpkin flesh out with the stew


lamb chop stew

6 lamb chops into camp oven with chopped onion & garlic brown over the campfire
,then add 1-2 cups liquid chicken stock ,potatoes, carrot , celery ( + any other vegies you have on hand)
put on lid and let hang over the fire for 1-2 hours...very easy to tell when its cooked because the meat is so tender!! ....
add salt n pepper to taste...
you could use sausages, steak , mince, chicken or any other meat of your choice.
very easy to make and tastes awesome.
If you dont have a camp fire you can use a coleman stove or bbq to cook. serves 4-6
Delicious!!!!

 


Wrap Up Breakfast.
Slice up Sausages lengthways and chop up Rashers, Fry 'em up altogether.
When cooked put to one side and scramble up some eggs.
Make up a some pancakes and throw in ur meat 'n' eggs and if you have some baked beans throw 'em in too.
Wrap 'em up nice 'n' tight and dive right in.
The messier the tastier. Enjoy.

 

Dessert is a tossup between Golden Syrup Dumplings and Chocolate Bananas-latter rather expensive these days. Here are both:
PS Have them on different nights.


Golden Syrup Dumplings
Ingredients (serves 4)
150g (1 cup) self-raising flour
60g unsalted butter, cubed
1 egg
1 tbs Golden syrup
1-2 tbs milk, to beat
Thick cream, to serve
Syrup
30g butter
220g (1 cup) caster sugar
4 tbs golden syrup
1 small lemon, juiced
Sift flour into a bowl, then rub in butter until mixture resembles fine breadcrumbs. Beat egg with a little milk and pour into flour mixture. Combine to form a dough, then divide into small balls.

To make the syrup, combine the ingredients together with 1 cup of water in a camp oven and bring to the boil over medium heat. Carefully add dough balls to syrup and cook in the camp oven for 20 minutes. Serve with syrup and cream.

 

Chocolate Bananas- very easy

Leave each banana in its skin. Split down the side with a sharp knife.
Place 2 or three pieces of your favourite block chocolate into the split banana. I have found plain or caramello to be the best.
Wrap each banana in foil and place in the hot coals of the camp fire or on the new Coleman stove until banana is cooked and chocolate has melted- usually 5-10 minutes.
Serve with cream or have them by themselves.

 

Pork and pineapple hotpot

Cube about 1 kilo of pork, roll in flour,
open tin of sliced pineapple
chop up a good sized onion
3 handfuls of rice
salt/pepper
anyleft over vege throw in
1 or 2 glasses of wine

Put all in camp oven add water, put on hot coals, pour yourself a glass of wine,
have a chat, gaze into the fire, have another glass of wine, watch it like a hawk.
Should be done, serve with damper . Quite gourmet.

 

Seafood Paella

Ingredients
saffron threads or pinch of powder
8tbs olive oil
crushed garlic 2cloves
1 can crushed tomatoes
small packet of fish stock
2 onions
Sea salt
1 tbls mixed herbs
4 anchovies
1 cup white rice
12 yabbies or green prawns, shelled and deveined. Leave the tails on
8 mussels
2 large fillets of fish chopped into rough cubes
garnish lime wedges and parsley
Method
Saute onions in the oil in camp oven. Add the garlic and stir. Add tomatoes, stock, saffron and seasoning.
Add anchovies and herbs.ON THE NEW STOVE heat a large fry pan and cook the rice in oil stirring continuously.
This should only take a couple of minutes. Then add the sauce from the camp oven and yabbies.
Let simmer until the rice is al-dente. This will take about 30 minutes.
Place the seafood on top, and let it cook gently, for another minute or so until the seafood is cooked.
Place garnishes on top.
Serves 4
My favourite would have to be grilled pineapple skewers! :) so simple but sooo delicious, especially if you drizzle with caramel while they are still warm. yuuum.


Toad in a hole

Mine is not so much a Recipe but more a camping tradition, I love my toads in a hole done on a bbq, My grandma used to do it for me as a child and now I do it for my Kids whenever we go camping... Toads in a hole consist of a cookie cutter hole taken out of a piece of bread, buttered both sides and then placed on the bbq, crack open an egg onto the hole in the bread, cook for a couple of minutes, flip and cook the other side for a couple more.. Magnifico!! Toads in a Hole!!

 



Banana melt.


1 banana skin on. 6 pieces of chocolate of choice.
Slice the banana down the side in the skin, slide the chocolate in.
Wrap in foil and place in the camp fire embers for about 5-10mins open up and you will only need a spoon to scoop out a delicious desert.
